Spicy Tuna Steaks

Moroccan Inspired Tuna

Ingredients:

**4 Fresh, good quality tuna steaks cut 1 inch thick **4 tablespoons Emelia’s Harissa **olive oil

Method:

If time permits rub Emelia’s Harissa over the tuna steaks, put in a sealable bag and let marinate overnight or as long as time permits. Heat up a large frypan with a drizzle of olive oil, let the pan get really hot. Add your tuna steaks that have been marinating, cook one side for 3 minutes then flip and another 2 minutes on the other side, this will give you a rare finish in the middle, cook longer for a more well cooked tuna. Let rest on a room temperature plate for a few minutes and serve with Emelia’s Spicy Slaw.

The ultimate salad for lovers of mango’s

Ingredients:

**washed baby rocket & spinach **12 cherry tomatoes washed **1/2 purple onion **1/2 cucumber **1 mango peeled ** fresh bocconcini **roughly chopped walnuts **Emelia’s Mango Dressing

Method:

Cut your cheery tomatoes in half, thinly slice your purple onion, peel and slice the cucumber and slice the mango. In a serving bowl gently mix together with your hands the rocket and spinach, tomatoes, onion and cucumber, then place the slices of mango on top, add torn pieces of fresh bocconcini and scatter the chopped walnuts then drizzle a generous amount of Emelia’s Mango Dressing all over. To add some protein simply add slices of a grilled chicken fillet or a grilled salmon fillet.

Ingredients:

**1 loaf of crusty bread **Emelia’s Fresh Pickled Garlic & Chilli **50 grams grated tasty cheese **50 grams grated mozzarella cheese **1 handful of washed parsley

Method:

Pre heat oven to 180 degrees or pre heat grill Line a baking tray with baking paper Slice your loaf into 1 inch slices and place on lined baking tray. Spread a generous amount of Emelia’s Fresh Pickled Garlic & Chilli over one side of each slice. Mix both cheeses together and sprinkle generously over each slice of bread. Finely chop the parsley and sprinkle over the cheese. Place in the oven or under the grill till cheese has melted and is starting to go golden brown

A re-invention of the classic Coleslaw

Ingredients:

**1/4 white cabbage **1/4 red cabbage **1/2 purple onion **1/2 red capsicum **1 large celery stick **2 spring onions **handful parsley **handful coriander **125 grams Emelia’s Harissa Mayonnaise

Method:

Wash all raw vegetables throughly. Have a large mixing bowl to be able to place all your ingredients chop them. Very thinly slice both cabbages and place in bowl along with diced onion, capsicum, celery and spring onions. finely chop the coriander and parsley and mix the dry slaw together. Once ingredients are mixed add Emelia’s Harissa Mayonnaise and keep mixing till blended well. Keep refrigerated until serving.
