Crispy Fish Fillet with Garden Salad

Enjoy a light and satisfying meal with this Crispy Fish Fillet with Garden Salad recipe. Fresh fish fillets are cooked to a perfect crisp and served alongside a vibrant garden salad, all dressed up with Emelia's Magic or Mango Dressing.

Ingredients:

  • Fillet of fish (John Dory, Snapper, Whiting, or White Flake)
  • Garden salad: tomatoes, lettuce, cucumber, Spanish red onion, capsicum, avocado, tropical fruits (optional: mango cheeks or paw paws)
  • 1 cup of self-raising flour
  • Salt to taste
  • 100ml of canola or light olive oil
  • Emelia's Magic or Mango Dressing
  • Tartare Sauce
  • French cut chips or scalloped potatoes

Instructions:

  1. Prepare a chilled garden salad with your chosen ingredients. Keep it cold while preparing the fish.
  2. Wash and dry the fish fillets using a paper towel. Set aside.
  3. In a large bowl, mix 1 cup of self-raising flour with a little salt.
  4. Heat the oil and cook the fish fillets, 3 to 4 pieces at a time. Turn once and avoid overcooking. Set aside to keep warm.
  5. Serve the cooked fish with French cut chips or scalloped potatoes, and the chilled garden salad. Toss the salad with Emelia's Magic or Mango Dressing. Add Tartare Sauce to complement your fish.
