Asian Fish Rub

Asian inspired rub, perfect for whole fish


-1 whole snapper
-olive oil
-1/2 jar Emelia’s Thai Ginger Mango Chutney
-1 whole chilli chopped
-1 handful fresh coriander
-1 knob fresh peeled ginger
-the zest & juice from 1 lemon
-1 tablespoon soy sauce
-1 stick lemongrass, belted


Pre heat oven to 180 degrees. In a blender add the chutney, chilli, coriander, ginger, lemon juice & zest and soy sauce, blend together till you get a paste. On a large bit of aluminium foil rub a bit of olive oil to prevent fish from sticking, place fish on foil and fill the cavity with paste then add the bashed sticks of lemongrass, wrap the fish up in the foil to create a totally sealed parcel / bag then place in oven for 30-45 minutes depending on the size of the fish. Once fish is cooked place on serving plate then drizzle over a few teaspoons of Emelia’s Thai Ginger Mango Chutney and serve. We have topped our fish with a Coriander, Chilli & Capsicum Salad
